Ingredients: (15 cookies)
- 1 tablespoon of ground flaxseeds + 3 tablespoons of water (or an egg non-vegan version)
- 150g cane sugar or brown sugar
- 50g brown sugar
- 1 tsp vanilla essence
- 60g oat flour
- 1 tsp baking powder
- 1/2 tsp of salt
- 50g chocolate chips @ noespectado.cl
Instructions:
1. In a small bowl, mix the crushed flaxseeds with the 3 tablespoons of water. Let sit for at least 5 minutes to thicken.
2. Mix the peanut butter with the sugar and panela.
3. Add the vanilla and flaxseed that you left resting to the previous mixture.
4. Add the oat flour, baking powder, and salt and mix just until incorporated.
5. Leave the mixture to rest in the refrigerator for at least 3 hours or until firm (if you bake the cookies without refrigerating first, they will be flat!)
6. Preheat the oven to 175ºC. Place the cookies on a non-stick silicone mat 2 inches apart (I only baked 9 cookies per tray as they expand in the oven)
7. Bake for 8-10 minutes or until the edges start to brown a little.
8. Remove from the oven and do not move the cookies until they cool completely so they do not fall apart.
